For Christmas, Santa surprised me with a pink kitchen aid mixer and Ive been dying to try her out!
Her name is Lucy!
Okay, so I’m a huge fan of banana’s so when I saw this recipe for Reduced Calorie Banana Bread on Pinterest, I knew I had to try it! I love it and I think this may be my permanent banana bread recipe!
Heres what you need:
1 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoons cinnamon
1/8 teaspoon salt
2 slightly beaten egg whites
1 cup mashed bananas
1/4 cup cooking oil
3/4 cup sugar (I only used 1/4 and it was perfect for me)
Non stick cooking spray
What To Do:
Preheat oven to 350 degrees. In a medium mixing bowl stir together flour, baking powder, baking soda,cinnamon and salt. In a large mixing bowl stir together egg whites, banana, sugar and oil. Mix the flour mixture into banana mixture just until moistened. Spray an 8x4x2 inch loaf pan with non stick spray. Spread batter in pan and bake for 45 to 50 minutes. Cool in pan for 10 minutes then remove from pan and place on a wire rack. Makes one loaf.
Now put the kettle on and make a large cup of earl grey tea, then relax with your favourite novel



I love that you named your mixer! Santa surprised me with one too this Christmas and I used it for the first time to make coffeecake over the weekend. They’re so great!

She’s beautiful!! Love the pink, mine is black and I love it. Gonna try your banana bread recipe, my usual is very high in fat and sugar, this looks like a nice change. I might even try subbing the oil with apple sauce.
Oh apple sauce is a great idea! I used less sugar than it calls for…bananas are already very sweet to me!
