i promised i would share the recipe for cheesy cauliflower pancakes from my valentines day post and i am very happy to keep that promise! this recipe is so good. hold on…lets stop here and talk about how magical cauliflower is.. who knew? i certainly didn’t.  i love cauliflower and kale soup…i make it all the time (i’ll share that recipe soon as well!). when i saw this recipe on pinterest, i knew i would probably fall in love. p.s. A Good Appetite created this recipe…genius!

cauliflower tastes like potatoes when steamed and mashed into heavenly goodness. i can’t eat potatoes, which is really quite sad since they are so yummy. cauliflower has come to my rescue and now i feel like i’m not missing out!

what you need:

1 head cauliflower
2 large eggs
1/2 cup cheddar cheese, grated
1/2 cup panko
1/2 teaspoon cayenne pepper (i didn’t add this)
salt
olive oil

method:

cut cauliflower into florets and boil until tender, then drain. mash the cauliflower while still warm, then stir in cheese, eggs, panko, cayenne and salt to taste.

pour olive oil in a skillet over medium-high heat. form the cauliflower mixture into patties about 3 inches across…i neglected this part, hence the reason mine aren’t that pretty! haha…oh well ;) cook until golden brown.

oh my, they are so good. i ate mine with a bit of sour cream, as suggested on A Good Appetite.

    This sounds yummy! I’ll have to make it for myself since my husband hate almost anything that grows out of the ground. My mom makes something similar to this when she makes Chiles Rellenos (stuffed chili peppers). I LOVE potatoes.
