pesto. i love pesto. you can make it yourself, or buy it in a magical jar. i made this pizza for my sister in law, rachel and her boyfriend tim. they came over for dinner. i was *super* excited. i love cooking for family and friends. i was trying to figure out something easy and quick to make as we didn’t have a certain time for dinner, so i thought i would make pizza with focaccia bread for the crust. it’s a favorite of mine right now and i know how to make this dough – like i could make it in my sleep.
yeah, well … dinner at 8pm ended up being dinner at 10pm. i am thankful for that big jar of yeast i bought for $4. it really saved the day, because i totally messed up on the bread — you know, the one i can make while sleeping? haha.
yeah, i freaked out. after my husband hugged me and helped me breathe again, i thought, “okay amber pull yourself together and make this yummy bread!”
thankfully i had everything, so i could make it a second time! this is what happened… i added 1/4 teaspoon too much for the yeast. yikes. what was a thinking? the dough is suppose to “pull together” while mixing and it didn’t. cue freaking out.
i made it again and it was perfect. whew.
focaccia bread is pretty magical. i like fluffy breads and focaccia is really fluffy. this is the easiest focaccia bread recipe, despite my mess up — that was my fault, not the recipes! quick, go make it!
the pizza is actually the magical mystery tour pizza from mellow mushroom, i just added pepperoni.
this is rachel and tim! we had so much fun with them. i have a ton of photo’s to share, but i’ll save them for later!
