Mini Powdered Sugar Donuts

I’ve been making mini powdered sugar donuts for a couple of years and I can’t believe I haven’t shared the recipe. They’re easy to make and guilt-free kind of guilt-free minus the powdered sugar! Mini donuts and Rice Krispies are my go to super quick dessert to make when I’m in a pinch or if I just want something sweet asap.

My mini donut pan is similar to this one.

Mini Powdered Sugar Donuts

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients

  • 2/3 cup coconut milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 2 1/2 tbsp coconut oil, melted
  • 1 cup GF flour
  • 1 1/2 tsp baking powder
  • 1/3 cup + 2 tbsp coconut sugar
  • 1/4 tsp salt
  • 1 cup powdered sugar

Instructions

  1. Preheat oven 350F

    1| In a small bowl, whisk together the first four ingredients. 

    2| In a large bowl combine next four ingredients. Add wet ingredients, stir well.

    3| Spoon batter into donut pan and bake for 8 minutes. Allow donuts to completely cool. 

    4| Add powdered sugar to a new bowl and dip or sprinkle sugar on donuts.
