If you love avocado’s, you’ll love this sandwich!
About a month ago I discovered that I am allergic to dairy products. No more tall glasses of creamy whole milk or delicious slices of cheese for me. After being sad about it for a few days, I remembered that I love goat cheese!
Goat cheese has been a wonderful substitute! I can feel better and still eat something delicious!
Avocado’s are probably my favourite right now. Did you know that Avocado is a fruit? I always thought it was a vegetable!
I can’t forget asparagus, I added it to the sandwich too!
Are you ready to make this sandwich?! Here’s what you’ll need:
Ezekiel Bread (our favourite is the sprouted grain & seed bread, it has a blue label!)
Heat a small pan with a little extra virgin olive oil. Chop the ends off of your asparagus and place them in your pan and add salt and pepper. While that is cooking, slice your avocado down the middle. Once you remove the pit, slice each side four times. You should have eight slices. Take your asparagus out when you’ve cooked it to your liking and throw your avocado in! While that’s warming up, toast your ezekiel bread then spread some goat cheese on both slices of bread. Arrange your asparagus on your bread and then the avocado and ta da! You just made a delicious sandwich!
I hope you enjoy it as much as Stephen and I have!
Happy sandwich making!
