Baking a cheesecake has always terrified me, but after receiving Lucy for Christmas I secretly vowed to make lots of cheesecakes for Stephen in 2012…well actually for the rest of his life. Cheesecake always seemed to be bit tricky to me and the thought of baking one looked like disaster…but it wasn’t a disaster after all! If you’ve felt this way about cheesecake, I can assure you it is actually quite easy. And wow, am I relieved because I have a lot of cheesecakes to bake!
There is one thing you need to know about baking cheesecake: patients. Cheesecake takes a lot of time, in fact, it takes days for the cheesecake to be just right. For instance, once the cheesecake has been baked, you have to turn your oven off, leaving the cheesecake in the oven to cool for an hour. Then the cheesecake needs to cool at room temperature for another hour. Now it’s time to be placed in the refrigerator over night. Next day: you could slice into the creaminess…but is it ready? Probably not.
Yeah, I made that mistake. The cheesecake was good, but it wasn’t amazing. It was tangy. I was so disappointed; however a few days later I was delighted to find the cheesecake in absolute perfect condition…mmm. I have no clue why cheesecake needs to “settle” – I’m sure there’s a scientific reason, but I’ve never been good at science, so I’ll skip that part and just give you my advice and the recipe!

My favorite is a Ricotta lemon cheesecake with caramel apple topping. REALLY creamy. Everyone loved it.
That looks delicious! I have only made one cheesecake (it was a turtle cheesecake), it turned out GREAT and guess what? It was DAIRY FREE! (And even our dairy loving friends could not tell!) Crazy?! Yes! I did it because my husband cannot tolerate dairy and missed cheesecake, it was truly a labor of love, and completely worth it. I will have to make another one soon. By the way…love your blog update. Simply precious.
