It’s cold and windy here in North Carolina. Apple Crisp is the perfect treat to stay warm! I paired it with Trader Joe’s chocolate coconut ice cream. hello.
Apple Mixture:
10 apples
2 Tbsp lemon juice
2/3 cup sugar (I used coconut sugar)
1/3 cup all purpose flour (I used gluten free)
2 tsp cinnamon
3/4 tsp salt
1/4 tsp cloves
1/4 tsp nutmeg
Topping:
2 cups all purpose flour (I used gluten free)
1 1/2 cup brown sugar
1 cup oatmeal
1/2 walnuts, chopped
1 cup butter, or coconut oil
hand full of chocolate chips, optional
Peel, core and slice apples. Add lemon juice and stir. In a small mixing bowl combine sugar, flour, cinnamon, nutmeg, cloves and salt. Add to apples and mix. Set aside.
For topping mix flour, brown sugar, and oatmeal in a separate bowl. Use a fork to mix melted butter, or coconut oil. Distribute crumbly topping over apple mixture. Sprinkle walnuts and chocolate chips on top. Cover and bake for 60 minutes. Enjoy!
