Last spring I had a little impromptu tea & rosé party. I texted my neighbor, Roshani, and asked, “hey, I just made carrot cake, wanna eat it with me?” She texted back, “Yes! I’ll bring rosé!”
She brought these flowers too, aren’t they beautiful?! It was a beautiful afternoon, perfect for our little tête-à-tête. I made coconut cream topping for our cake and sprinkled chopped pecans on top. Super easy, and it’s cute!
I don’t usually buy box cake mix, but this one was gluten-free and well, honestly it was delicious. The box mix is by Namaste Foods and you can buy it here.
I made the coconut cream topping night before using Minimalist Baker’s recipe. Her instructions are so thorough! She explains why it’s important to use the right type of coconut milk, etc. Definitely read her entire post before making the topping.
I think carrot cake is my favorite type of cake!
