I love tomato juice, especially when it doesn’t have tons of salt and sugar. I think homemade anything is the way to go, so I’m happy to share my tomato juice recipe with you! This recipe only makes three cups so make sure you double it if you want more. Okay, let’s get started!
+ Eight tomatoes, chopped
+ Two cups of celery, chopped
+ One large onion, chopped
+ Half teaspoon of cumin
+ One tablespoon of local honey
+ One-fourth cup parsley
+ Six drops sriracha, or your choice of hot sauce
+ Freshly ground sea salt & black pepper to taste
Add all ingredients to a large pot. Allow forty minutes of simmering.
Use a strainer and a large pyrex measuring cup to strain the tomatoes and vegetables. This process takes awhile, but it’s worth it. I store my tomato juice in a ball glass canning jar.
This tomato juice is much healthier than store bought brands, and it tastes better! Keep refrigerated, it will stay fresh for one week.
