I posted our March 2020 video on social media last night and it’s been encouraging to hear what everyone is looking forward to after the quarantine is over.
I’m looking forward to long walks and wine at @divinellamavineyards , a fresh cut from @hutchthebarberwsnc , and I’m definitely getting a vegan cheesecake slice from @villagejuice !
Until then, I thought I would share my favorite homemade oatmeal cookie recipe! These cookies are the perfect quarantine comfort cookie.
Since I’m dairy and sunflower oil free it’s difficult to find products I can bake with. Most chocolates have sunflower lecithin that act as a binding agent for chocolate.
Anyway, all that to say I was beyond excited when I discovered Enjoy Life products! You can buy Enjoy Life chocolate chips on Amazon or request your local grocery store to stock their products!
This is my favorite oatmeal cookie recipe, I hope you enjoy it as much as I do!
Old Fashioned Oatmeal Cookies
Ingredients
- 1/2 cup butter, I used dairy-free
- 1/2 cup brown sugar
- 1/4 cup coconut sugar
- 1 egg, I used egg replacer
- 1 ½ tsp vanilla
- 1 cup flour, I used GF flour
- 1/2 cup oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp xanthan gum
- 1/2 tsp salt
- 1/2 cup mini chocolate chips, I used the Enjoy Life brand
Instructions

Mix together in a large bowl

roll dough into cute little balls

bake for 12 minutes at 325F
