I took the first bite and was in disbelief for a solid ten minutes that I actually made these cookies. They’re delicious and soft. It’s like peanut butter’s best kept secret, from me at least. I’ve never been a huge peanut butter fan —I like it, but it’s not first on my list when I have a sweet tooth. These cookies made the list though. Preheat your oven to 350ºF. You will need:
+ 1/4 cup creamy peanut butter
+ 2 Tablespoons butter, I used dairy & soy free Earth Balance
+ 1/2 cup brown sugar
+ 1 egg, I used Ener-G Egg Replacer
+ 1/2 teaspoon vanilla
+ 3/4 cup all-purpose flour, I used Trader Joe’s
+ 1/2 teaspoon baking powder
+ 2 Tablespoons coconut sugar for coating
Use an electric mixer to cream peanut butter. Add brown sugar, butter, then egg and vanilla. Continue to mix until creamy. In a separate bowl, whisk flour and baking powder. Slowly add to electric mixer.
Roll cookie dough into balls then roll into coconut sugar. Bake for 12 minutes. Allow to cool for 10 minutes and then transfer to cookie rack.
