Get ready. I’m about to share some tips that may be life-changing.
Rice Krispie treats are a classic sweet treat that I love, but not always. When I was a kid, I didn’t like them, and it was because the texture was wrong. Marshmallows should never be crunchy!
Marshmallows can be a little fussy, and the only way to soften them without over-cooking them is on low heat. You can achieve better results with a dutch oven, but if you don’t have one, that’s okay! The key is to soften your marshmallows slowly on low heat.
What you’ll need:
Cheesecake pan (if you want a circular shape)
Flat wooden spatula—I cannot recommend this enough!
Dutch oven or a large pot with a lid
3 TBSP of butter, I use Earth Balance for dairy-free Rice Krispies
Rice Krispies
16 oz jumbo marshmallows
How-to:
✸ Melt 3 TBSP of butter in your dutch oven or large pot
✸ Add 16 oz jumbo marshmallows and stir, coating all the marshmallows in butter.
✸ Slowly heat marshmallows on low for about 1.5 hrs—it’s worth it!
✸ Once your marshmallows are melted and smooth, add food coloring if you’d like! I use this powder food coloring.
✸ Add 2 cups of Rice Krispies and stir, then add 2 more cups, stir and repeat.
✸ Once all your Rice Krispies are coated with marshmallows, add them to your cheesecake pan or a dish.
Be sure not to press the Rice Krispie + marshmallow mixture into your pan. Fluffy = delicious!
