I have been gluten free for five years now and I’m finally able to enjoy oatmeal cookies. I was missing xanthan gum in every cookie recipe I tried. This is the magic sauce to making gluten free cookies fluffy.
And now you know I am not a chef *giggles*
Trial and mostly error, eventually I figure recipes out and this magic happens.

1/2 cup dairy free butter, I use Spectrum Organic Shortening
1/2 cup brown sugar
1/4 cup coconut sugar
1 egg, I use Ener-G Egg Replacer
1 1/2 tsp vanilla
1 cup gf flour
1/2 cup oats
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp xantan gum
1/2 tsp salt
1 cup mini chocolate chips, I use Enjoy Life Semi Sweet Chocolate Chips
2 tbsp coconut milk, if needed
Mix everything together. Use a tablespoon to place cookie dough on parchment paper. Bake at 325 F for 15-20 minutes.

I am going to make these as I have a love for oatmeal cookies and they need to be GF. I am new to GF. cooking and trial and error gets expensive. I have 5 recipes for Blue Berry Cobbler and ended up adding my own touch. That touch was to let the batter sit for 20 min to let the flours absorb and not be grainy. Try it the next time you make it.
