I’ll admit these aren’t the best photos, but my camera was dead and the next best thing was my phone!
I’ve been meaning to blog about this recipe gem for awhile now. It’s so easy, all you need is one pan and a small mixing bowl for the sauce. Preheat your oven to 425F
Kale
Arugula
Tomatoes
Half pound of fresh Salmon
One pound of fresh Shrimp
For the sauce:
Spicy Brown Mustard
Dijion Mustard
Cholula hot sauce
Honey
Spread kale and arugula on the bottom of a large cast iron pan. I usually pile it pretty high. Place salmon in the middle and shrimp and tomatoes around the salmon.
In a small bowl, mix spicy brown mustard, dijon mustard, cholula hot sauce and honey. For half pound of salmon I made one cup of sauce to cover the top. Taste as you go, and change if you prefer your sauce more spicy or more on the sweet side.
Bake for 16 minutes.
This is my go to recipe when we have guests over for dinner, total time to prepare and bake is 25 minutes. Oh and one pan to clean!
